The seaweed has been present in the culinary tradition of East, West and African ancestral cultures for thousands of years, yet it is virtually unknown to many westerners.  Those that have enjoyed the pleasure of consuming them have surrendered to their gastronomical virtues, in addition to its texture and flavor.
Nutritionally speaking, the seaweed is rich in proteins, minerals and vitamins, but mainly in elements difficult to find on land vegetables, particularly the iodine. Except for some specific type of fish, the seaweed is our best natural iodine source. In addition to the iodine, the seaweed is also rich in other key minerals like magnesium, calcium, potassium, iron, zinc, selenium, manganese, cobalt, vanadium, etc.  This is one of the reasons why the seaweed is consumed by patients with anemia, osteoporosis and other diseases.
The seaweed is ideal for weigh management diets. Low in fat, sugars and calories, they help regularize the intestinal function and protect the digestive lining.
